How to Make a Barbecue Smoker Cooker
- 1). Fill a large bowl with water, and add at least five handfuls of wood chips to the water. Let the wood chips soak for no less than 20 minutes. Wood chips can be bought in the grilling section of your local home store.
- 2). Add charcoal to the grill. The charcoal should be placed on half of the grill, to one side. Pour lighter fluid over the charcoal and ignite with a match. Let the charcoal burn uncovered for roughly 20 minutes until the flame dies down, leaving only hot coals. Allowing the charcoal to burn will also take away the flavor of lighter fluid.
- 3). Place the wood chips on top of the hot coals.
- 4). Fill the aluminum pan with water, 1/2 inch from the brim. Place the pan into the grill next to the charcoal. You can add seasonings of your choice to the water to add more flavor to your food while cooking, but this is completely optional.
- 5). Place the cooking grate into the grill, and place the food on top, over the water pan. Do not place the food directly on top of the hot coals.
- 6). Cover with the grill lid, and insert the cooking thermometer into one of the air vents on the lid. Keep track of the temperature to make sure it stays under 250 degrees Fahrenheit. The proper temperature for smoking food is between 200 and 250 degrees Fahrenheit. Smoke food for four to six hours.
