Introduction to Recife Cuisine
Recife's diverse culinary history has its origins in the earliest stages of Brazil colonization. Founded in 1537, the city has had centuries to perfect its wealth of flavors, in which country and sea ingredients and an amalgama of cultures - indigenous, African, Portuguese, Dutch have played a role.
In recent years, a new generation of chefs and restaurants have turned Recife, along with Rio, São Paulo and Belo Horizonte, into one of Brazil's leading gourmet centers.
Besides these star-studded places, the city is rich in affordable and delicious finds. All over town, you can eat the region's famous sweets, whose origin dates back to the Sugarcane Cycle started in the 16th century. One of the best is Recife's signature bolo de rolo - a fine angel food cake roll.
