How to Cut a Bell Pepper

Bell peppers add color and crunch to numerous Chinese stir-fries. But this roughly bell-shaped vegetable can be difficult to cut into the even pieces you need for stir-frying. Here are simple steps showing how to cut a bell pepper into thin strips or chunks.

Time Required: 5 minutes

Here's How:
  1. Lay the pepper on its side and cut off the top stem, where the pepper starts to widen. Cut off the bottom.


  1. Stand the pepper upright and use a chef’s knife to cut a slit down one side. (Do not cut the pepper in half).
  2. Lay the pepper skin-side down. Move the knife to along the insides of the pepper, removing the inside membranes and the seeds. You now have one long rectangular strip that is ready to cut into strips or chunks.
  3. To cut the bell pepper into strips, cut the long strip into 2 or 3 sections. Take each section and cut into thin slices about 1/2-inch thick.
  4. To cut the bell pepper into chunks, rotate the slices 90 degrees, line up evenly, and cut again into 1/2-inch chunks.
