How to Make Dory
- 1). Preheat your grill or oven to 400 degrees Fahrenheit to cook John Dory fillets. Heat 2 tbsp. of extra-virgin olive oil in a sauté pan on medium-high heat to pan-fry John Dory fillets.
- 2). Whisk 1 egg in a bowl with a whisk until a foam forms. Add ½ tsp. of salt and ½ tsp. of pepper. Add herbs, such as garlic or thyme, and acidity by juicing a lemon or orange, if desired.
- 3). Pour ½ cup of flour on a plate and ½ cup of Italian-flavored breadcrumbs on a different plate.
- 4). Dredge both sides of the fish in flour. Dip the dory in the egg and coat both sides of the fish. Dredge the dory in the breadcrumbs, coating both sides.
- 5). Place the fish on a baking sheet on a middle rack in the oven or in the sauté pan. Wrap the fish in tin foil, if grilling, because the direct heat of the grill can make the delicate fish fall apart.
- 6). Bake the fish for 10 to 15 minutes in the oven, without flipping it. Pan-fry the fish for about three minutes on each side, flipping the fillets halfway through with a spatula. Grill the fillets for four to five minutes on each side, flipping with a spatula. The breading should be golden brown and the fish should look white and opaque, indicating the fish is cooked.
- 7). Remove dory fillets from the heat and serve with a lemon wedge or top with sauce, if desired.
