Onions were the first major crop to be produced in Texas, are the official state vegetable and continue to be the state's leading vegetable crop. "Short Day" varieties of onions -- those that will begin making bulbs early in the year when there are 10 to 12 hours of daylight a day -- do well in Texas, due to the warm year-round temperatures. - Created by a horticulture professor at Texas A&M University and introduced in 1986, this large tearless onion was specifically developed for the growing conditions of the southern part of the state. It is generally planted on October 15, thus the name. 1015 Texas Supersweet grows in the Rio Grande Valley of South Texas and matures in mid-April. It is large and globe-shaped, with a mild, sweet onion flavor.
- Made famous by the onion growing area in Vidalia, Ga., Yellow Granex, also known as "Vidalia," does well in the south Texas climate. A cross between 1015 Supersweet and Bermuda, Yellow Granex produces a flat, white bulb that is exceptionally sweet. It has a six-month maturation period. Due to its high water content, it does not store well, and is best eaten raw.
- White Bermuda is an extremely mild-flavored variety of short day onion. It produces a scallion onion in 30 days that is good eaten raw. Introduced to the region in the late 1800s from Canary Island, it is a gardening favorite in the state of Texas.
- Red Candy Apple onion has a delicious sweet flavor that makes it excellent eaten raw, as well as for use in recipes, particularly salads. It has a deep red, flattened globe and is small, growing approximately 3 inches in diameter. Red Candy Apple has a limited storage capacity of two to three months.
