How to Coffee Cure a Steak
- 1). Obtain freshly ground coffee or espresso beans. Grind your own coffee beans at the grocery store or use a home coffee grinder. Use the espresso setting on the grinder, regardless of the bean type - the finer grounds will produce a bolder taste.
- 2). Combine coffee and salt in a bowl. For your first recipe, start with 2 tablespoons of coffee and 1 teaspoon of salt for six, six-ounce steaks. To intensify the coffee flavor in future batches, add an additional tablespoon of coffee. If you are unhappy with the flavor penetrations, add a teaspoon of salt.
- 3). Add additional spices to the bowl containing the coffee and salt. Coffee blends well with cayenne, paprika, chili powder, cumin or pepper. Garlic also works well but may overpower the coffee, so use sparingly. You can also substitute garlic salt for salt, but double the amount to equal the same amount of salt. Remember to write down how much of each spice you use for future reference.
- 4). Rub the completed cure over each steak.
- 5). Place the steaks in a covered container or in plastic bags and store in the refrigerator.
- 6). Allow the steaks to cure for two to 24 hours. The longer the steak cures, the more intense the flavor will be.
