    • 1). Build your own kitchen compost collection unit using a 3-lb. coffee can or similar size nonporous container with a snap-on lid.

    • 2). Puncture the lid with holes spaced approximately 1/2 inch apart with an icepick.

    • 3). Line the kitchen compost collection unit with a plastic grocery store bag or similar liner. Place 2 inches of shredded newspaper in the bottom of the liner to act as bedding for the kitchen scraps. This will also help start the composting process.

    • 4). Place a square of carbon filter pad, available as "cut to size filter pads" at home improvement stores, over the top of the kitchen compost collection unit so that it overlaps the edge of the container slightly. Snap the lid over the top of the container, trapping the filter pad over the top of the container. While the kitchen compost collection unit should not generate much odor, the carbon filter pad will remove any odor and it is washable and reusable. It should also help control fruit flies, which can be a nuisance.

    • 5). Maximize the space in the kitchen compost collection unit while accelerating the decomposition of the compost by running the kitchen scraps through the blender or chopping them up into small pieces on a cutting board before putting them in the can. Place kitchen scraps, like vegetables, fruit and rinsed eggshells in the can. Also use coffee grounds, including the filter, as well as tea bags. Do not use meat scraps or whole dairy products such as cheese, milk and ice cream.

    • 6). Remove the lid to the can and place kitchen scraps in the compost collection unit. Make sure the filter is in place over the top of the container and snap on the lid. When the container is full, use a shovel to make a hole in the outside compost pile, add the kitchen scraps, minus the plastic bag, and cover it with the older compost.
